Ingredients
- 1 cup dates
- 1/2 cup boiling water
- 1 cup spelt flakes/rolled oats
- 1 cup rolled oats
- 1/2 cup mixed seeds
- 3/4 cup chopped mixed nuts
- 1/2 tbsp cinnamon powder
- a pinch of salt
- 4 tbsp peanut butter
- 2 tbsp coconut oil
- 1/2 cup dried berries
Instructions:
- Remove the seeds from the dates and soak them in boiling water for at least 15 minutes.
- Blend the soaked dates with peanut butter and coconut oil.
- Add spelt flakes, rolled oats, seeds, nuts, cinnamon powder and salt to a bowl and mix everything. Add the blended mixture to the dry ingredients and mix. If you prefer slightly more sweetened add 2-3 tbsp maple syrup.
- Spread it on a baking tray and bake in a preheated oven at 160 degrees for 40-45 minutes giving it a mix every 15 mins.
- Once baked let it cool then add dried berries and mix. You can use this granola to top your oats, yogurt parfait, acai bowl or just snack on it. Store it in an airtight container.
